The Story of Mudafara Cheese

In the heart of Kordofan, Sudan, lies Kazgeil — a town forever linked to its legendary cheese. The story unfolds in the late 1920s, as nomadic herders flocked to the region’s lush pastures and fertile soil, blending their traditions with local farmers in a shared dairy legacy.

A cheese-making school in nearby El-Obeid welcomed Kazgeil’s people, teaching them skills they brought home to perfect. Post-independence, development initiatives sparked growth, transforming the town into a dairy hub where milk routes wove nomads and settlers into one vibrant community.

Kazgeil’s pride is Mudafara cheese — meaning “braided” cheese, akin to mozzarella yet uniquely textured and spiced with Nigella seeds, standing proudly beside the classic white cheese as emblems of enduring craft.

Now, this heritage reaches Canada — not merely as cheese, but as a testament to resilience amid Sudan’s challenges. Stories of Sudanese spirit, like those from Kazgeil, live on forever.
